Don’t waste your money buying Jiffy Cornbread Mix, as it is so easy to mix up a batch yourself.
All you have to do is mix all ingredients together add an egg, oil and milk and you are ready to bake a Jiffy Cornbread. I like use this mix when I make my Holiday Creamy Corn Casserole.
The ingredients make the equivalent of one box of Jiffy Cornbread Mix.

Copycat Jiffy Cornbread Muffin Mix
Ingredients
- 3 cups Bisquick Baking Mix
- ¼ cup Tapioca Flour
- ¾ cup cornmeal
- ¼ cup White Sugar
- 1 ½ teaspoon baking powder
Instructions
- Mix all dry ingredients together.

Is there something you can use to substitute for the tapioca flour?

Jill can this be made without the sugar? I know that Jiffy makes a mix without sugar in it but it seems impossible to find and while the mix is convenient I would like to not have a sweet cornbread.
