Vitamix Watermelon Lemonade

Summertime fruit and vegetables are do delicious and I like to take advantage of what each bounty brings. I love lemons and most anything flavored with lemons. Watermelon is a favorite summer fruit, so what better way to incorporate both watermelon and lemons? Why, Watermelon Lemonade, of course.

I got the idea from Julianne Hoff, who got the idea from her sister, who got the idea from, just kidding, I don’t know. I simplified the process using my VitaMix.

Watermelon brings me back to my Summer Camp days at Camp Floridays and also to my sleep away camp, Camp Ocala. More so to Camp Floridays. (If you don’t have a VitaMix, a blender and a saucepan will work.)

Perfect wedges of watermelon were served just about every single day and all the campers rushed to get their wedge. My memories of watermelon at Camp Ocala was discovering that peanut butter tastes really good on watermelon. I’m not kidding! I also use to put peanut butter in my vanilla ice cream. I was know as “The Peanut Butter Kid.”

Make sure you are using very sweet watermelon. If the watermelon is not sweet, the taste of the drink will be off and you don’t want to have to add more sugar, as that really does not help improve the taste. I love to use Florida Crystals Demerara Cane Sugar for this recipe.

If using a VitaMix, add the sugar and some water to the container and on high speed for three minutes, or until you have a simple sugar. I like to start slow and than raise the variable speed and then go full throttle and push the knob to High.

If you do not have a VitaMix, buy one, they are awesome. If you don’t have one, you can boil the sugar and water on the stove to get a simple syrup and just use a regular blender for the rest of the recipe.

I like to make my simple syrup with Florida Crystals Demerara Cane Sugar, but you can use any raw or organic sugar. I love the Florida Crystals, because it is sweet without being cloyingly sweet. We use this in our morning Cuban Coffee.

Allow the simple syrup to cool for a bit. Add a few ice cubes to help it cool.

Squeeze the lemons and make sure to remove any seeds.

Add the cubed watermelon and the lemon juice to your VitaMix.

Note that you have used the wrong VitaMix container and go grab your 64 oz container and transfer everything into the larger container. Oy!

Now, pour the simple syrup, watermelon and lemon juice into your 64 oz VitaMix container, unless of course, you were smart enough to use the bigger one in the first place, unlike me. I have made this so many times and don’t know why I used my 32 oz container.

Add the water and a little ice (so that the juice doesn’t get warm) and blend on high speed for about 20 seconds.

If you want a sparkling drink, substitute the water for sparkling water! You can add a shot of vodka too, but you didn’t hear me say that!

Pour into glasses filled with ice. Enjoy. For an adult drink, add a shot of vodka!

Ingredients

  • 4 cups Watermelon seeds removed
  • 3 cups Fresh Ice Cold Water
  • 1/2 cup Fresh Water
  • ½ cup Lemon Juice freshly squeezed
  • ½ cup Demerara Sugar
  • Lots of Ice Cubes
US Customary - Metric

Instructions

  • Place sugar and 1/2 cup water into Vitamix and blend on high speed for 3 minutes. Allow to cool.
  • Cut up watermelon and remove seeds.
  • Add watermelon chunks, lemon juice and 3 cups of water to Vitamix and blend until smooth.
  • Pour over ice and enjoy.

Notes

If you do not have a Vitamix, use a saucepan to cook the sugar and water on the stove. Then use a blender.
