Pollo Tropical Creamy Curry Mustard Sauce {Copycat Recipe} is a delicious dipping sauce for Fried Yuca and fantastic in egg salad. Low carb and keto too!
In South Florida, there is a chain restaurant called Pollo Tropical, not to be confused with Pollo Loco, in California.
The restaurants are not related, but both use fresh ingredients and cook their chicken, right there in the open. Pollo Tropical is considered a “Caribbean” Fast Food restaurant. Hmmmm…..
My favorite thing on the menu is the Yuca Fries with Curry Mustard Sauce.
Oh my gosh, the sauce is so incredible. The restaurant has a condiment bar in the middle of it and patrons are free to take what they want.
Although they have a Drive-Thru, I always opted to go inside the restaurant to order. Why?
Because then I can load up on the delicious Curry Mustard Sauce.

What are the Ingredients for Curry Mustard Sauce?
- Mayonnaise – use Duke’s, it’s even better
- Yellow Mustard
- Curry Powder
When we moved back to Los Angeles, I made a special trip to Pollo Tropical, just so I could grab some to-go Curry Mustard Sauce.
We drove across the Country in our RV, so I froze containers of the sauce.
When I ran out, well, it just wasn’t pretty. I tried to make the Sauce myself and came very close.
After searching on line, I found a recipe that claimed to be a copycat of my beloved Pollo Tropical Curry Mustard Sauce.
I was thrilled, as I had guessed the ingredients, but not the exact measurements. My Sauce, my sauce!!!!!! Come to me.
Not only is this Pollo Tropical Curry Mustard Sauce terrific on my Air Fryer Yuca Fries, it makes a delicious dipping Sauce for my Air Fryer Pub Style Corned Beef Egg Rolls and is fantastic poured over my Pressure Cooker Spanish Tortilla {Cuban Egg Frittata}.
Add all the ingredient to a bowl. This only makes about 4 ounces, so you might want to double the recipe, so you can use it on all kinds of things.
As a sandwich spread, dipping sauce, over a grilled steak, the possibilities are endless.
It’s ridiculous how only a few simple ingredients tastes so wonderful as a sauce.
Use a Whisk and combine the ingredients until the Sauce is very smooth.
Put some muscle into this, to make sure all ingredients are well combined. Or,
You can do what I do and pull out my trusty Vitamix and give it a quick whirl.
In just a couple of seconds, you will have the most delicious copycat version of the Pollo Tropical Creamy Curry Mustard Sauce.
It is a fabulous dipping sauce for my Air Fryer Yuca Fries. Use this Sauce, instead of plain mayonnaise when making an Egg Salad Sandwich.

I do find it interesting that the ingredient photo shows Kraft mayo, yet it is not a recommended brand (Hellmann’s is what I use).

This worked out really well! I live in South Florida and love Pollo. My favorite combo is the curry mustard sauce with plantains. It sounds weird (and it kind of is) but the sweet/salty contrast is really terrific. I made a pollo style meal tonight for my family and this sauce took it to the next level. Whoa baby. This is perfect I moved from Florida and miss Pollo so much. I was uncertain about the color and texture when I was making it, but popping it into the fridge before serving really perfected it.

Don’t buy Mayo, it’s not real Mayo, especially not a Light version, that shit will mess with your health! Remember, don’t fear the Fat, fear the Carbs! It’s so easy to make, and it’ll taste 100 times better than any store bought fake version! 🙂
