Instant Pot Pressure Cooker Carolina BBQ Sauce Recipe

Once you have made the BBQ Pork Rub, it is time to make your barbecue sauce, as you will need some of the Pork Rub for this recipe. This sauce is adapted for the Pressure Cooker from the Neely’s recipe for the stove top. The sauce is a vinegar/acidic sauce and pairs with the BBQ Pork Rib Rub Recipe, for my Pressure Cooker BBQ Pork Spare Ribs.

It is very important to note that on its own, this sauce tastes too acidic and too vinegary, so, please don’t taste it and judge…….yet!!!! Once you pair it with my BBQ Pork Ribs, you will feel the love. It’s like Sonny without Cher (not the other way around), or a warm bath, without bubbles. Know what I mean?

Yes, I know, there are a lot of ingredients here, but, the good news, is that, if you make the whole recipe, you can freeze half for next time. That’s what I do!

After you remove your Pressure Cooker BBQ Pork Spare Ribs from the Pressure Cooker cooking pot, dump out the liquid and give the cooking pot a rinse. Add all Sauce ingredients to your Pressure Cooker cooking pot, give it a good whisk to combine and cook for just a few minutes. By the time your Ribs have caramelized, your Sauce will be hot and ready to go.

Look what a few minutes under pressure can do! It’s like a miracle. Give the sauce a good a good whisk, as you will see some separation.

Ingredients

  • 16 oz Ketchup
  • 8 oz Water
  • 5 Tablespoons Light Brown Sugar
  • 5 Tablespoons White Sugar
  • ½ Tablespoon Freshly Ground Black Pepper freshly ground
  • ½ Tablespoon Granulated Onion Powder
  • ½ Tablespoon Dry/Ground Mustard Seed
  • 1 oz Lemon Juice
  • 1 oz Worcestershire Sauce
  • 4 oz Apple Cider Vinegar
  • 1 oz Light Corn Syrup
  • 1 Tablespoon Rub

Instructions

  • Add all ingredients to your Pressure Cooker and whisk together well.
  • Lock on lid and close Pressure Valve.
  • Cook on High Pressure for 5 minutes.
  • When Beep is heard, allow a Natural Pressure Release.
  • Finish up your Pressure Cooker BBQ Pork Spare Ribs in the oven and then serve with Sauce.

Notes

Please don't judge the taste of this sauce until you pour it over my BBQ Pork Spare Ribs, as the Rub for the Ribs, pair with this Sauce.
