Breakfast Soft Yolk Burrito is a combination of a scrambled egg and sunny side up eggs. Firm whites with loose yellow yolks make for the best egg, cheese and bacon burrito. No more dry and hard egg burritos!

Ingredients for Breakfast Soft Yolk Burritos

  • Eggs
  • Cream Cheese
  • Butter
  • Cheese
  • Ham, Bacon or Sausage (optional)

Pro Tip: A little smear of cream cheese will add creaminess to the breakfast burrito.

Heat your skillet up prior to adding in the fat. This will help your pan to become non-stick. I recommend the Lodge 8″ Cast Iron Skillet.

Butter, olive oil, bacon grease, shortening, whatever you normally use to grease your skillet is what to use!

Pro Tip: Chop up the meat of your choosing so that it will cook faster and you will get some in every bite!

I used ham, but you could use ground leftover turkey, chicken, bacon, turkey sausage. The possibilities are endless. You could also skip the meat.

  • Bacon
  • Ham
  • Sausage
  • Red, Green, Orange, Yellow Bell Peppers
  • Mushrooms

All the above add ins work well in this Breakfast Soft Yolk Burrito.

Pro Tip: The meat and eggs should be mostly cooked prior to adding the eggs. The eggs cook so fast and in order to keep the yolks runny, any add ins should be cooked or mostly cooked first.

Once the white part of the eggs are cooked, add your favorite cheese. Cheddar cheese is always a great choice in burritos.

Blocks of cheese will melt better than pre-shredded cheese. A good Microplane Artisan Course Grater will easily grate the cheese.

Best Type of Cheese

  • Any cheese you like is the best type. The important thing is to grate it yourself.
  • Blocks of cheese will melt better and taste fresher than packaged shredded cheese.
  • Package shredded cheese has a starch coating to keep the cheese from sticking together. This causes the cheese to dry up and not melt well.

Some of the cheese will melt, but mostly the cheese will just become warm, which is perfect.

Lodge 8″ Cast Iron Skillet stays very hot long after use, so turning off the burner prior to the yolks cooking is a perfect trick for runny eggs.

They yolk will quickly warm, but remain runny!

The heat of the cast iron skillet will melt the cheese and cook the yolks enough so that they are not raw, and won’t drip out of your burrito, but loose enough for those who like soft yolks.

Once the burrito is sealed, the cheese will continue to melt and be absolutely perfect.

The little schmear of cream cheese seriously gives breakfast burritos a creamy taste.

Scoop the eggs to once side of the tortilla, giving room on both sides to tuck in and fold.

Ingredients

  • 1 Tablespoon Bacon Grease or other fat
  • Ham chopped (or other meat)
  • 2 large Eggs
  • 1 Tortilla
  • 1 Tablespoon Cream Cheese Optional
  • 2 ounces cheddar cheese or other cheese

Instructions

  • Heat cast iron skillet over medium heat.
  • Add in the fat.
  • Toss in the ham and lightly brown.
  • Smear cream cheese on tortilla.
  • Crack the eggs into the skillet and scramble just the whites.
  • Grate in the cheese.
  • Turn off burner and crack the yolks.
  • Mix together to achieve desired yolk preference.
  • Add mixture on top of cream cheese.
  • Roll up.

Notes

Feel free to leave out the meat.

    “Pro Tip: The meat and eggs should be mostly cooked prior to adding the eggs.”???? Had to read this a couple x’s, maybe I need another cup of coffee. Then some of my backyard eggs. Course I’m missing a few things: cream cheese, tortilla, cilantro, salsa. Sounds GREAT!!!
