But, for breading and coating meat and/or veggies, it is incredible.

Tips and Tricks.
- A food processor makes grinding up the pork rinds so much easier.
- As we use my All Purpose Low Carb Seasoned Breading all the time, I usually make a double batch.
- Another option is to take a freezer baggie and use a rolling pin to smash the pork rinds.
Processing the pork rinds with the seasonings will ensure an even mix.
They seem to work better when processed into fine crumbs, much like breadcrumbs.

I like all the added things you put in the mix. I have been buying “Pork Panko” on Amazon for years but never added flour, etc to it.
Shari says
How do you get the breading to stick?
Benjamin says
Dry the protein with kitchen towel, then dip in a beaten egg, then in the breading mix.
Helps if you then leave uncovered in the fridge for an hour or so before cooking, but can still be fried straight away

LOVED this recipe. My husband has diabetes and I was looking for breaded fish when I came across this one. I followed it as written with the exception of adding some Thia chile powder for a little kick. I was surprised that you can’t really taste the pork rind.
Jill Selkowitz says
Hi Marta. Thank you so much! I am glad you enjoy the coating. Jill
Kay says
I make up a huge batch that will last for weeks in the freezer. It’s so convenient to be able to have it on hand. It thaws in seconds.
Deb Smith says
Thanks so much for the recipe, Jill. This was soooo good. I used it on chicken strips that I fried in my cast iron skillet. They had great flavor and crisped up beautifully. I am usually the only one in the house who will eat pork rinds. No one else had a clue that they were coating their chicken!! Delicious!
Jill Selkowitz says
Thank you, Deb! Jill
Lisa Dutcher says
Do you use an egg dip and coat the food twce?

Jill says
Sometimes. Jill
Rose says
I added grated Parmesan cheese to the mix for a little extra flavour and my chicken strips turned out amazing.
Jill says
Sounds great. Thank you so much. Jill
Tracey says
This looks great, but I’m allergic to coconut. What would you suggest instead, or should I leave it out and add more pork rinds?
Jill says
Another type of low carb flour would work or you can leave it out. Jill
Alison says
Can you freeze this for a longer time or will it lose its crunch?
Jill says
It would lose crunch, however, after air frying, pan frying or baking, it would crisp back up. Jill
Cynthia Cooperstein says
This is fabulous! I’m like you and dislike pork rinds, ugh! Trust all your recipes and used on fish (coated w mustard like your catfish recipe) and it is OUTSTANDING! My diabetic hubby loved it!
Jill says
Cynthia, this makes me so happy. I am thrilled you both love this breading!!!! Jill
